"Pressed" Joint

Mortar is typically 20% of the makeup of a brick wall.  In some walls as in the opening photo, the mortar dominates the look of the brick wall.  If the mortar joint is thin, the brick will dominate.   The pressed joint picture frames the brick and is basically a weeping joint pressed back onto the brick.  The mason can also squeeze bag mortar over the joints then press with a trowel to get this effect even if the house is many years old.
